Garlic "scape" is the term used to describe the stem part of the
plant of a "top setting" or "stiff neck" type (ophioscorodon)
garlic.
This particular batch of freshly picked or "snapped" scapes are rearing
their heads before the chopping block routine that makes a pleasant culinary
surprise of these edible parts of the garlic plant.
